SIMPLE PANCAKES

Breakfast | Serves 1

INGREDIENTS:

  • 1 large banana

  • 2 eggs

  • 1 teaspoon coconut oil

  • 1/4 cup blueberries

  • 1/4 cup raspberries


METHOD:

  1. Mash the banana in a bowl.

  2. Break in 2 eggs and whisk.

  3. Heat ghee in a fry pan.

  4. Cook 1/4 cup of mixture at a time on med heat 

  5. Top with ricotta and blueberries (or fresh topping of your choice)

Yum!
